Madrid Fusión Alimentos de España 2027

Madrid Fusión Alimentos de España is the international gastronomy congress held annually at IFEMA Madrid since 2003. Its organisers present it as the most important culinary summit in the world, a meeting point where chefs, producers, sommeliers, journalists and food-industry suppliers exchange knowledge on a global scale.

25th anniversary edition - February 1-3, 2027, IFEMA Madrid

The 2027 edition is billed as a historic one: the congress celebrates its 25th anniversary with a special programme honouring the legacy, influence and transformative power of a conference that changed the way cuisine is understood.

It also brings one of the largest logistical and exhibition transformations in its history. The congress expands from the ground floor of Hall 14, as it has done until now, to occupy the whole of Hall 12 as well, integrating all stages, the areas of its other congresses and the exhibition zone on a single floor for the first time.

What to expect

• Multi-day programme of live cooking demonstrations, masterclasses and tasting sessions with an international chef line-up.
• Exhibition area covering ingredients, equipment, technology and services for the gastronomy sector.
• Sister events under the same brand, including the Island Wines Summit series, plus a Dreams programme strand.
• The previous (24th) edition was held on January 26-28, 2026 under the slogan "The customer takes control".
