International Ice Cream and Palette Fair is a consumer food-and-art fair held in Mexico City. The 2026 edition took place from 5 to 7 February 2026 at the World Trade Center Mexico City, bringing together ice-cream makers, pastry chefs and visual artists for tastings, live demonstrations and interactive workshops that blend gastronomy with art. The fair showcases innovative ice-cream creations and an extensive exhibition of palettes and culinary art from around the world. Dates for the next edition are to be announced.
